Bollullos De La Mitación combines impressive religious history with lively festivals, historic paths and special nature attractions. The Ermita de Nuestra Señora de Cuatrovitas plays a central role: it is the sanctuary of the Virgen de Cuatrovitas, and the Romería de Cuatrovitas takes place there every year. The brick minaret of the hermitage was built around the 12th century and is derived from Syrian towers. After the Reconquista, the hermitage was converted into a Christian temple. On the fourth Sunday in October, during the Romería, the image of Cuatrovitas is taken in a silver canopy on an ox-drawn cart from Bollullos to its hermitage.

Culture and history

The parish church of San Martín de Tours also preserves significant works of art. It houses four paintings by Francisco de Zurbarán depicting Santa Catalina, Santa Inés, Santa Lucia and San Blas. The four Zurbarán paintings are dated to between 1640 and 1645. Another historical trace can be found in the Aldea de Cotrovita, where archaeological remains have been preserved that are associated with a cleansing ritual or a hammam.

Festivals and paths

The festival calendar extends beyond the Romería. Santiago Apóstol is celebrated on 25 July; on this occasion, the patron image of Santa María de Cuatrovitas is carried from its country chapel to the village. Music can be heard at Las Noches de Cuatrovitas, a music series at the foot of the Almohad minaret of Cuatrovitas in a historic setting. The Ruta de las Haciendas follows signposted paths between historic rural haciendas whose origins date back to Roman times. A water reservoir from the Almohad period has also been preserved near these historic haciendas.

Nature and activities

The Centro de Naturaleza de La Juliana is located in a century-old pine forest that is considered a transit zone for birds heading to Doñana National Park. The Centro de Naturaleza de La Juliana features the “Bosque Suspendido” tree adventure park, considered the first tree adventure park built in Andalusia. This means that two clearly defined natural features are found side by side at this location: the pine forest with its described function as a bird passage and the tree adventure park as a separate offering of the centre.

The Aeródromo La Juliana has its own visitor regulations: the private airfield is intended for visitors and pilots, access and parking are subject to mandatory charges, and the site is monitored by video around the clock. Tandem jumps are also offered for people who have no previous experience in this sport.

Mosto and regional cuisine

Mosto is a defining feature of several of the town’s culinary traditions. The Ruta de la Tapa y el Mosto is a recurring gastronomic event featuring traditional and innovative tapas accompanied by locally typical mosto. At Bodegas Salas, mosto made from the Pedro Ximénez grape variety in Montilla is trodden by foot, fermented in twenty chestnut-wood barrels and then bottled by hand. At Bodega Salas, traditional regional stews and grilled meat can be sampled together with the mosto fermented in its own barrels.
