History
Historically, a type of cheese was produced in Rozagás that differed from Cabrales: it was made from raw cow's, sheep's and goat's milk and matured for two months. Rozagás is one of three places in Peñamellera Alta where caves and livestock farming are used to produce the cheese with the protected designation of origin Queso de Cabrales; Cabrales cheese matures in natural caves in the mountains, and Rozagás is one of the places in Peñamellera Alta where it is produced.
