Mörsbach was first documented as “Mersbach” in 1335. In the same year, the properties of Mersbach were transferred to the abbot and convent of Marienstatt Abbey with the consent of all heirs.

At Birkenhof, the cattle live outdoors year-round on certified organic pastures. The farm manages around 80 hectares of grassland. Birkenhof sells beef in packages of approximately 12 or 22 kilograms once sufficient demand has been gathered.
