Discover Suflí: gypsum history, Fritada and trails
Culture
The Sendero de las Yeseras de Suflí (SL-A 027) begins at the Fuente de los Caños in Suflí. From there, it leads to Andalusian gypsum quarries and gypsum kilns dating from the 15th century.
The Fuente de los Caños de Suflí is a monumental fountain from the late 19th century. It is located opposite the town on the left bank of the Boloyunta River, in the La Zanja area. Made in the Baroque style from white marble from Macael, it has three iron outlets.
The parish church of Nuestra Señora del Rosario in Suflí dates from the 18th century. It has a wooden coffered ceiling and contains an altarpiece by Jesús de Perceval.
The Ermita de la Cruz has a square floor plan, a pyramidal tiled roof with five roof finials, and a portal with a round arch.
The historic buildings differ considerably in their design: in the parish church, the wooden coffered ceiling and the altarpiece define the interior, while at the Ermita de la Cruz, the floor plan, tiled roof and round-arched portal determine the exterior form.
History
The Centro de Interpretación del Yeso is usually closed; you must request a visit from the Ayuntamiento. A free audio guide explains the olive oil production process in six steps.
The center conveys the historical importance of gypsum as a frequently used material in traditional architecture. It is located in a restored old oil mill; there, visitors can see olives being ground and pressed to obtain oil.
The connection between gypsum and olive oil makes two historical areas of work visible at the center without conflating them: the audio guide organizes olive oil production into six steps, while the exhibition explains the role of gypsum in traditional architecture.
Cuisine and Festivals
Fritada de Suflí is a traditional homemade preserve made from peppers and tomatoes. It is also used as a pepper-and-tomato sofrito for meat dishes.
The Fiesta de la Fritada takes place in July and has been held since 1992. On May 3, Día de la Cruz is celebrated at the Ermita de la Cruz with Hojuelas, hot chocolate and traditional children's games.
The calendar therefore contains two different festival dates: the Fiesta de la Fritada takes place in July and is associated with the local preserve, while Día de la Cruz is celebrated at the Ermita de la Cruz on May 3.

Trails and Recreation

The official Laroya–Gérgal cycling stage passes through Suflí via the AL-6101.
The Sendero de las Yeseras and the Laroya–Gérgal cycling stage can be understood as different route topics: one connects the starting point at the fountain with gypsum quarries and gypsum kilns, while the other runs as an official stage along the AL-6101 through the town. In addition, the municipal recreation area at the fountain offers gardens, tables, barbecue facilities and stone seating.
