Étables lies on the first rises above the Rhône Valley. The Gorges du Doux form the southern boundary of the village. The south, particularly along the banks of the Doux, is dry and characterised by a southern feel, while the north is more reminiscent of a mid-mountain landscape. The valley hollows form a transitional zone between the Haut Vivarais plateau and the Gorges du Doux. The agricultural landscape also reflects this contrast: fruit growing dominates in the south, while livestock farming and mixed agriculture shape the landscape in the north.

Culture and history
The Château de Faÿ was built in the 14th century. It features one round and one square tower; a pointed-arch portal leads into the inner courtyard.
During the Crusades, Étables was known as a stopover on the route from Le Puy to Jerusalem.
Next to the church stands a remarkable lime tree, which has been designated a protected site since 1936. According to tradition, it is one of five trees that Sully had planted in Ardèche in 1600.
